Yes, the rumors are true. I went off and joined a cult, but it is the most delicious cult ever!!! It also has given me extra hours… full hours extra in which to sew and quilt. This my dear kittens is a cult I can get behind.
The cult of the Instant Pot.
I come from of a long line of people who are scared shitless by pressure cookers, in a very similar way that cats are terrified of cucumbers ( really, Google it). This fear while a bit over the top is not totally unfounded given that both myself, my late mother and even later grandmother were all witness to the destruction caused by old style pressure cookers left unattended. Let us just say that the two foot hole blown through the ceiling of my neighbors kitchen made it clear that playing with pressure was not for the faint of heart.
And yet I could hear it calling. Faster meals at home… fork tender beef… the call was strong and like a sailor called to the rocks by buxom sirens I along with 215 THOUSAND ( go ahead do the math $69 bucks each x 215,000) other people bought Instant Pots on Amazon Prime day last week.
Holy shit balls this thing is amazing!
One click and that baby was mine ( to be truthful.. I texted the husband and told him to order it.. I was busy at the shop.. but same diff..no?) 48 hours later it was on my front porch begging for me to make something…and make something I did. I made Korean Beef, straight from the pages of Pinterest. Of course I added my own spin, including chilling it then serving on a salad since it is hotter than balls outside these days, but you know.. got that pot, had it cooking and done in no time! Might I also add, 1 pot, easy clean and it did not heat up the kitchen.
I have to say it was not nearly as scary as I thought it would be ( I am after all the person who gets a bit jittery around a tube of Pillsbury biscuits – I am not the only one…right?) and by the second IP use I felt pretty damn confident and turned out some very good Quinoa in no time flat!
The Korean beef was DELISH and I will be posting my version up some time soon, but until then, try out the one above.. it should be great.
Next up IP Chicken Marsala and then IP Cheescake???? ( wtf?)

I know this thread is several months old now, but I just came across your blog while looking for non-fuddy-duddy quilting resources– and this post made me love it EVEN MORE 🙂 I also bought an IP on Prime Day, and use it at least 4x/week (2x as pressure cooker, 2x as slow cooker, depending on work schedules). I highly recommend the cookbook _Hip Pressure Cooking_, and that same author’s blog (http://www.hippressurecooking.com). Lots of good recipes, some a little too involved for a weeknight, but most pretty simple and hands-off. We make variations on her chicken adobo recipe at least once a month. Dad Cooks Dinner (http://www.dadcooksdinner.com) is also good for IP recipe ideas. Happy cooking (and quilting)! 🙂

I remember my mother using a pressure cooker. It was so fast! I haven’t thought about it in ages, but it does seem like a good time to bring it back!
Is this a sous vide thing? A new fangled pressure cooker? Or just a fancy crock-pot? Always the geek… what makes it better than the crock/pressure cooker/sous vide?

I too have a fear of pressure cookers. I would love to see more recipes and know more about why this cooker took the pressure off using your pot.

The crock pot is my time saver. 15-20 minutes of prep and voila–the whole day is open for quilting!
I bought one but haven’t used it yet. Trying to find time to sit down and look up recipes. 🙂
I can’t wait to hear more about your IP adventures. I have a pressure cooker that I have used exactly once – scares me to death. Saw that IP was on sale last week and bought one (I couldn’t resist the siren call of one that actually made cute noises when the top was on correctly). When it arrived I saw that it probably would do exactly what my other one does. Oh well, I opened it anyway, but haven’t used it yet. Cook on my dear and share all the successes and failures!
Maddie, I listened to my friend across the country tell me all she was making in her Instant Pot….. for nearly a year …. then Prime Day happened and I went completely nutso and got the bluetooth one. It. Is. Awesome. I had jitters so I did the test run with water. Not so scary. I’ve made beef stew that is ah-MAZ-ing and pulled pork. Just to be clear, I have been described as one who can burn boiling water. This thing is da bomb. I’d love to have more recipes! Enjoy it with me!!!
I use mine at least once a week to make yogurt. I have a step-by-step on my blog if you ever want to try ! I used to switch out the silicon rings (so my yogurt wouldn’t taste like spicy wings) but I was also one of the 215,000 on Prime Day, so now I have 2, one for yogurt (and rice and other non-spiced things) and one that I’ll be trying your Korean Beef recipe !
