Yep, back at it again and once again I am totally winging this shit!  Lucky once again it came out amazing and worthy of passing on to you fine BadAss people.

BadAss Quilter cooks French Beans and Potatoes

The actual night of this meal I was honestly despondent at the idea of cooking yet another dinner. I did the math and I have fixed more than 10 THOUSAND dinners since I was first married 28 years ago… 10 – FREAKING THOUSAND DINNERS… oh my lord, the HUMANITY!

I even went so far as telling my family we would be eating cereal until my mojo showed back up… really Cap’n Crunch for EVERYONE!

And yet there were fresh potatoes and snap beans from our little neighborhood farmers market that needed to be used up and with that dinner was born.

and yes, I am using the Instant – Pot again. (just Google this amazing thing..)

French Potatoes and Beans

12 mid sized red potatoes,washed, cut in 4-6 pieces each.

4 cloves garlic peeled

Fresh green beans tipped and snapped ( the amount in my bag was like 4 good handfuls)

Toasted Sesame Oil ( I am addicted to this stuff)  Be liberal with it.

Dressing – olive oil, grainy mustard, tarragon, balsamic vinegar, honey, salt

 

Let’s cook!

Instant Pot on Saute ( high)  blop in some oil and then toss in the garlic and let it cook for a few minutes. Keep it moving so it does not burn. Throw in the potatoes and the beans and give it a stir. Crank in some salt and a bit more of the oil and then put the instant pot lid on and set for 8 minutes of pressure cooking using the manual function with the vent closed. When the pot signals with its happy little jingle, release the steam and  open the  pot and check the potatoes. If not done put it back on for 2-3 minutes.

When done move to serving bowl and give it a moment to cool. While cooling mix up the dressing.  I am a totally fly by the seat of my pants dressing maker.. but it goes like this. 1 spoon on grainy mustard, 1/8 cup good Balsamic, couple shakes of tarragon and then 1/4 cup olive oil… then just the smallest dab of honey and some salt…. mix and taste. It should be rather strong since the potatoes will soak it up…  pour over the potatoes and bean and let sit until room temp.  This is pretty classically french so serve at room temperature with a bit of parmesan cheese on top if that idea excites you.

We did this as a vegetarian main dish but it also works as a side with some BBQ chicken if you are so inclined!
